Recipe review: Vegan Apple pie

Hi there! It's still very cold here in NZ. It is pouring at the moment but it's actually not too bad staying at home on a rainy day. The sound of rain makes me relax.

My partner has asked to me to bake an apple pie if I feel like. I love an apple pie but I've never baked it before and also never eaten a homemade one. Japan is not apple pie culture and a lot of people I know are not positive eating stewed fruits. My dad is one of them. However, I loved the apple pie from McDonald's (don't judge me😂) when I was a child. Teriyaki burger and Apple pie were my regular order. (does Teriyaki burger exist only in Japan?)





Anyway, I thought it would be quite challenging for me to bake an apple, nevertheless it was pretty easy and simple. I used a recipe from "who needs salad" for both the pastry and the filling(filling recipe; who needs salad).



I researched what apple is good for baking apple pie and majority of people use "Granny Smith" as they said it's firm and has a crisp and sour taste which is good for baking.

I decided to use Granny Smith and it was right decision.




The recipe says that use fork or pastry cutter to mix the dough until it becomes clumpy and sand like.

However, I used my finger to rub the mixture. It's easier and quicker.




I stopped rubbing the mixture when it looks crumbly like this photo above. There are still some lumps but it's all good!

I'm warning you if you bake an apple pie using this recipe. I mean the recipe is awesome but you have to be careful with the amount of water. The recipe said once it became breadcrumbs like, add 1/2 cup and 2 tbsp ice water in it. I added 1/2 cup water at once. It turned out really soggy.

It's obviously too much water. It's possibly the vegan margarine I used wasn't firm enough but I recommend to add 2 table spoons of water at a time. I put some flour in and chill it in the fridge for 20 minutes to fix it.



It was still really soft but I managed to cover the filling up. Finger crossed and put it in the oven!!



50 minutes later. It looks gorgeous😍


It was SOOOOOOOOO GOOD. The pastry wasn't chewy or yucky. It's just flaky and crispy!!


I definitely recommend this recipe. It's just need to be careful of adding the water as I mentioned, otherwise it will be perfect! even I added too much water it was still good.
