Creamy Udon Noodle

It's been very cold here in NZ. When I was a little my mum always made us a Hot Pot with Udon noodle in Winter (Almost everyday). I think Soup Udon noodle is the most common winter food in Japan as it's very quick and easy to make. However, I always wanted my mum to make soup Udon with creamy flavour but I never asked for this. I knew my mum won't say yes because the majority of my family wouldn't enjoy that flavour.
I finally made it!! and I was right. It was delicious!!!

You can see the little crumble things on top of the noodle. It's baked tofu. I used recipe from it doesn't taste like chicken.
Creamy noodle recipe and instruction.
Ingredients (Servings: 2)
• Any Vegetables that suitable for frying.
( I used garlic, spinach, capsicum, mushrooms, onion, bok choy and kale)

• 1 handfull of dried sliced shiitake mushrooms.
(Soak with 1 cup of water for at least 10 minutes)

• 1 tablespoon Tahini
• 1/2 cube or 1 teaspoon any kinds of vegan stock.
• 2 tablespoons Soy sauce
• 1 1/2 cup Soy milk
• 1 teaspoon White miso
• 1 tablespoon Nutritional yeast
• 1 teaspoon salt
• 2 packs of udon noodles
Instruction
1, Prep vegetable
Put a little bit of oil and swirl to coat the fry pan then add all the vegetables you chopped.
2, Add the dried shiitake that has been soaked including the water (the water got Umami from the shiitake which makes the soup richer).
3, Once it boiled add the rest of ingredients except Udon. Stir it slowly until all mixed.
4, Add Udon noodles

DONE!!
Note
• Once you add Soy milk be careful not to boiled the soup. It will curdles in high temperatures. (However, it won't really affect to the taste)
• I used soft udon noodles as it's easier to cook than dried ones ( See photos below). If you like to use dried Udon noodles you will need to cook them separate.

I wouldn't say it's a traditional way to eat Udon noodles but it's very fun to try something different! If I showed this recipe to my parents they would say
"It's Jyadou!"
Jyadou means a bad way like you suggest something against traditional.
my parents used to like to use this word. (I think they thought it's kinda funny to say that ). haha.
